Notes: Instead of stuffing the potatoes again, I just mashed them with the filling and gently mixed in the roasted grapes at the end and ate out of a bowl. The combination of flavors works astonishingly well.
Recipe: Honey Pound Cake
Notes: No alterations, but I would recommend placing the loaf pan atop a baking sheet in case it overflows a bit. I needed about 10 minutes more baking time than the recipe called for.
Recipe: No-Fuss Focaccia
Notes: SO GOOD. Also, shockingly easy. Definitely something I’ll be making again, and soon.
Recipe: Bacon Buttermilk Dressing
Notes: Sometimes I get in moods where all I want to eat are vast quantities of spinach. When that happens, I like to make up this dressing to have on my salads. I find all the ingredient amounts except the mayo and buttermilk to be suggestions, and just throw together what looks good.
Recipe: Buffalo Chicken Mac and Cheese
Notes: I only used one bell pepper, and found that enough. The cream cheese gives this a really creamy, indulgent feel I couldn’t get enough of.
